Dis winter en jou mond water vir ‘n warm, stomende snytjie brood saam met sop of sommer as ‘n happie tussen maaltye. Maar hoe gemaak as jy jou bes probeer om koolhidrate uit te sny en winkelbrood te vermy? Probeer gerus om hierdie broodjie te bak. Dit is propvol sade, olies en gesonde vesel en word boonop sonder ‘n krieseltjie koringmeel gemaak. Die broodjie hou lank en as dit gesny en gevries word, is ‘n paar minute in die broodrooster al wat nodig is om dit weer te ontdooi – net reg vir ‘n dik smeersel almandel- of pekanneutbotter!

– 1 koppie sonneblomsaad

– ½ koppie gemaalde lynsaad

– ½ koppie gekapte amandels of haselneute

– 1 ½ koppie gerolde hawer

– 2 teelepels chia sade

– 4 eetlepels psillium vesel

– 1 teelepel seesout

– 1 eetlepel heuning

– 3 eetlepels gesmelte kokosneutolie

– 1 ½ koppies water

Roer die laaste drie bestanddele saam en voeg by droë mengsel. Meng en laat staan vir ‘n uur of langer. Bak in ‘n broodpannetjie teen 180 grade C vir 45-60 minute. Haal die brood na 20 minute uit die pannetjie en laat dit die res van die baktyd op die oondrak gaar word.

It’s winter and you yearn for a steamy slice of bread with soup or just as a snack between meals. But what if you are trying to cut carbs or doing your best to avoid store-bought bread? Try baking this wholesome little loaf. It is chock-full of seeds, contains healthy fibres and oils and is made without a speck of wheat flour. The bread lasts long and when cut and frozen, a few minutes in the toaster is all that is needed to enjoy it piping hot again. As a treat – top with a dollop of almond or pecan nut butter – mmm….

– 1 cup sunflower seeds

– ½ cup ground linseeds

– ½ cup chopped almonds or hazelnuts

– 1 ½ cup rolled oats

– 2 teaspoons chia seeds

– 4 tablespoons psyllium fiber

– 1 teaspoon sea salt

– 1 tablespoon honey

– 3 tablespoons melted coconut oil

– 1 ½ cups water

Mix last three ingredients and add to dry mixture. Mix and let stand for an hour or longer. Bake in a bread pan at 180 degrees C for 45-60 minutes. Remove the bread from the pan after 20 minutes and leave to bake on the oven rack for the remainder of the cooking time.
